I used ENER-G potato starch for the egg replacer and a non-dairy margarine for the butter replacer.
Turned out pretty good actually for a first crack. Contrasting intense sweetness from condensed milk and intense sour from lime juice and zest, collide but end up working together well for a powerful little bar. Thanks again to Cooks Illustrated for the recipe. And at only $25 bucks a year for online access to ALL of their recipes, totally worth it.
